Are cocktails with “fat-washed” spirits the new trend, or just a phase?

I recently tried a cocktail made with bacon fat-washed bourbon, and it was… interesting? I know fat-washing spirits isn’t new exactly, but it seems like it’s getting more attention lately. Is this becoming a legit trend in cocktail culture, or is it one of those niche things bartenders experiment with for a while and then it fades? Anyone here a fan of fat-washed drinks? What’s the weirdest (or best) one you’ve tried?

I think fat-washing is here to stay for a while, especially as more people look for bold flavors in their cocktails.
