Can the mineral content in water really change the taste of coffee that much?

I’ve always heard people say that the water you use can make or break your coffee, but I didn’t think much of it until recently when I tried making coffee with different bottled waters. The difference in taste actually surprised me! Is the mineral content in water really that influential? What’s the best type of water for brewing a perfect cup—does it have to be fancy or filtered? Would love to hear if anyone’s done a deep dive into this or has tips.
