Acorn jelly is a seasonal side dish in South Korea every autumn. In the mountains, oak trees produce enough acorns during fall.
The acorns are shelled and boiled for a few hours. The acorns are then ground into a fine paste that will be combined with water to create acorn starch.
Afterward, the acorn starch is dissolved in water, and the mixture is poured into a pot and cooked until it thickens to a jelly-like consistency.
