I feel like sourdough got all the love during the lockdown days, but does anyone here still keep a wild yeast starter? I’ve kept mine going for about two years now, and honestly, it feels like a little pet at this point. I bake with it regularly, and I swear the bread tastes different depending on the season! Anyone else have the same experience? If you’re still using wild yeast, do you add anything to yours to tweak the flavor, or just let nature do its thing?
