Does the type of sugar impact cookie texture more than butter or flour?

I’m experimenting with different sugars in my cookie recipes—brown, white, coconut, etc. I’m curious if anyone else has noticed a bigger change in texture from the sugar type compared to swapping out butter or flour. What’s your experience?

Different sugars definitely affect texture! Brown sugar tends to add moisture and chewiness, while white sugar can make cookies crispier. Coconut sugar has a more complex flavor and can impact color and texture slightly differently.
