Dorie Greenspan, a well-loved cookbook author and long-time Paris resident, shares that the French apéro dînatoire is the perfect, easygoing way to enjoy the Olympics. This informal meal, blending elements of a picnic and a cocktail party, focuses on buying high-quality items and arranging them simply, rather than elaborate cooking. For a low-stress, festive spread, Greenspan suggests including cherry tomatoes, olives, nuts, cold radishes with butter and sea salt, deviled eggs, gougères, charcuterie, cheese, pickles, bread, crackers, and her favorite salmon rillettes. The rillettes, made from cooked and smoked salmon mixed with mayonnaise, mustard, lemon, capers, and herbs, are prepared in advance and served with baguette rounds or bagel chips, along with cucumbers and pickled beets for added crunch and color.
