How adventurous are you with trying new cuisines?

Do you stick to your favorites, or do you love exploring flavors from around the world? I’ve recently been trying to branch out, and I’m obsessed with Ethiopian injera and Korean bibimbap. What’s the last “new-to-you” cuisine you tried, and did it live up to the hype? Also, any tips for first-timers diving into something unfamiliar?
