How important is the type of potato in making fries?

I’ve been experimenting with making fries at home (because why not?), but I keep hearing different things about the best potato to use. Some people swear by russet potatoes, others are all about Yukon Golds. Do you think the type of potato actually affects the crispiness or flavor that much? Or is it more about the cooking method?
