We all know the big ones—garlic, basil, rosemary, etc.—but I feel like there are probably so many amazing spices and herbs that don’t get nearly enough love. Do any of you have a favorite “underdog” spice that you think people have kind of forgotten about? I’m on the lookout for some unique flavors to add to my cooking, especially if they’re cultural gems from other cuisines that don’t get mainstream attention. What’s your spice cabinet secret?
