Is this chicken organ edible?

I’m not sure which organ it is but it is found on the bone on their back next to the spine bone. I have always thrown it out. Is it good or bad to eat it?

It sounds like you might be talking about the oyster, a tender, flavorful piece of meat on the back of a bird near the spine. It’s actually considered a delicacy by many! Definitely worth trying!
