Huitlacoche, also known as Mexican truffle" or "corn smut," is a Mexican delicacy made from corn infected with a fungus of the same name. It has a smoky flavor and is often used in quesadillas, tamales, and soups. Interestingly, Mexicans have been eating huitlacoche for centuries; the dish dates back to the Aztec civilization.
