How long can an opened can of this product be kept in the fridge? I like it now and then but I don't use it that much. Is it safe to eat it after a week or two after being opened?

An opened can of Reddi-Wip lasts about 1-2 weeks in the fridge if stored properly. Check the expiration date and give it a good shake before using. If unsure, it's best to toss it!
