Okay, hear me out—I love cheese. But sometimes, I open a package, and it smells like an old gym sock that’s been left in the sun. Yet somehow, it tastes incredible?? How does that work? What makes certain cheeses smell so funky but taste so good? And, more importantly, what’s the smelliest cheese you’ve ever had, and did it actually taste worth the stink?
