Why do some cheeses smell so bad but taste amazing? 🧀

Seriously, some cheeses smell like gym socks but taste incredible. What’s the science behind this? And does anyone have a personal favorite "stinky but delicious" cheese?

Haha, it’s wild how some cheeses have that funky smell but are so delicious! I’ve heard it’s all about the bacteria and mold that develop during the aging process—those little microbes are what give the cheese its unique taste. My favorite "stinky but delicious" cheese has to be Limburger. It’s definitely an acquired taste, but so worth it!
