Why do some fancy restaurants serve dessert with olive oil?

I had this dessert the other day, and instead of the usual chocolate drizzle or caramel, they topped it with olive oil! I was pretty surprised, but it was actually amazing—added this fruity, rich layer to the sweetness. Apparently, this is a thing with some desserts? Like ice cream or even citrusy cakes with a little olive oil on top? Why does it work so well? Is there a specific type of olive oil they use for this? I kinda want to try it at home if I can find the right type!
