I've noticed some oranges have a thicker white pith than others, and I’m wondering if this changes how they’re used in cooking or juicing. Do certain types work better for specific recipes?
 
Yes, the pith can make a difference! Oranges with thicker pith tend to be more bitter, so they're better for zesting or using in marmalades where the bitterness can add complexity. Thinner-pith oranges are ideal for juicing or using in salads since they have a sweeter flavor and less bitterness.
