For decades, grade school diagrams depicted the tongue with specific zones for each taste (sweet, sour, salty, bitter, umami). However, this simplistic map is no longer entirely accurate!
So, if taste receptors are everywhere, why did we have the "taste map" for so long? What other long-held beliefs about the human body might be due for an update? Does this new understanding of taste perception change the way you think about flavor experiences?
