- 2 cups cooked shredded chicken
- 2 cups enchilada sauce
- 1 cup shredded cheese
- 8-10 corn tortillas
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil
- Preheat Oven: 350°F (175°C).
- Filling: Sauté onions, bell pepper, and garlic in olive oil. Add chicken, cumin, chili powder, salt, and pepper. Mix well.
- Assemble: Warm tortillas, fill with chicken mixture, roll up, and place in a baking dish.
- Top: Pour enchilada sauce over tortillas, sprinkle with cheese.
- Bake: 20-25 minutes until bubbly.
- Serve: Garnish with cilantro, sour cream, and avocado.
