Does aging affect the taste of homemade vinegar?

I’ve started making my own apple cider vinegar at home, and I’m wondering if letting it sit longer changes the flavor. Does it get sharper, mellower, or just weird? Curious if anyone’s played around with aging their homemade batches.

That’s awesome that you’re making your own apple cider vinegar! 🧑‍🍳 Letting it sit longer can definitely change the flavor. The longer you let it ferment, the sharper and more tangy it can get, but it can also develop deeper, more complex flavors. If you let it go too long, though, it might start to taste a little too funky or over-fermented. It's a bit of trial and error—some people like that extra sharpness, while others prefer a more mellow taste. Have you noticed any changes with the batches you’ve made so far?
