Eggplant - can't get into it

I've tried eggplant in various Chinese dishes and don't like the texture. What are different ways of preparing that might be more likeable? (In any world cuisine.)
I disliked tofu for a long time but then I discovered mapo tofu which is pretty good.
 
As simple as fried eggplant, or eggplant with egg or just simply grilled eggplant with vinegar. I'm an eggplant fan as well haha.
