Has anyone experimented with unconventional sushi rice flavors?

I’ve been making sushi at home for a while and wanted to play around with different rice flavors beyond the traditional vinegar/sugar mix. Has anyone tried using something like coconut or saffron rice for sushi? If so, how did it turn out, and what fillings worked best with it?
 
Using different rice flavors for sushi can be fun! Coconut rice can add a sweet, tropical twist, which might pair well with fillings like shrimp, mango, or avocado. Saffron rice could give a subtle, aromatic flavor that might work with tuna or lightly spiced fish. It's all about balance, so trying complementary fillings would be key!
