Why are there 613 commandments in Judaism and not, say, 600?

So, I was reading up on the mitzvot (the 613 commandments in Judaism) and got curious... why exactly 613? Is there some deeper meaning behind that number, or is it just what was counted up over time? It’s so specific, I feel like there has to be more to it. Anyone have insights on how this number was settled on? And do all Jewish denominations view it the same way?
