🍓 Why do some milk teas curdle when adding fruit syrups?

I tried adding a splash of fruit syrup to my milk tea, but sometimes it curdles! Is there a trick to prevent this? Maybe certain fruits work better with milk tea?

Acidic fruit syrups can curdle milk tea. It's like adding lemon juice to milk.
