Why do some religions have dietary restrictions but not others?

Ever notice how some religions are super strict about food (like kosher, halal, or vegetarianism in some Hindu/Buddhist practices), but others let you eat whatever you want? What’s the logic behind it? Is it about purity, discipline, or just old-school health rules that stuck around? And why do some belief systems that emphasize spiritual discipline (like certain branches of Christianity) have no food rules at all? Curious to hear your thoughts!
