Why does my bibingka sometimes turn out dry?

I've been following the same bibingka recipe, but every so often, it comes out too dry. Is there something I might be missing or doing wrong? Could it be the type of coconut milk or cooking time?
 
Bibingka can be tricky! If it’s coming out too dry sometimes, it might be a couple of things. The type of coconut milk can make a difference—full-fat coconut milk tends to give a richer, more moist texture, while lighter versions might dry things out. Also, overbaking could be the culprit, so you might want to check your oven temperature or cooking time. You could even try slightly underbaking it and letting it finish with the residual heat. Have you tried tweaking either of those things yet?
