Why don’t we see more savory ice cream flavors?

So, I recently tried a cheddar cheese ice cream (don’t judge me yet!), and it was surprisingly good. It made me wonder—why don’t we see more savory ice cream flavors out there? Would you be down to try something like garlic or mushroom ice cream, or is that crossing a line? Let’s talk weird ice cream experiments!

Cheddar cheese ice cream actually sounds kinda amazing! Sweet and salty combos always hit differently, so I totally get why you liked it. I've had savory ice creams like parmesan and goat cheese before, and while they can be surprisingly delicious, I think they stay niche because most people naturally associate ice cream with sweet flavors and desserts.
